Pumpkins are the perfect ingredients to make some cosy autumn treats.
Pumpkin pie by
You will need:
- 1 pack sweet pastry
- 450g pumpkin, prepared weight
- 75g dark soft brown sugar
- 2 large eggs
- 1 egg yolk
- 1 level tspn cinnamon
- 1/4 level tspn nutmeg
- 1/2 level tspn allspice
- 1/4 level tspn cloves
- 1/2 level tspn ginger
- 275ml double cream

1. Roll the pastry into a dish and bake at 170degC for 20 to 25 minutes.
2. Prepare the pumpkin by cutting into chunks without the skin - make sure you ask an adult to help with this. Bake in the oven for 20 to 25 minutes.
3. Pass the cooked pumpkin through a sieve into a bowl, then mash with a fork.
4. In a bowl, whisk together the eggs and egg yolk.
5. In a pan, heat the cream, sugar and spices, bringing to a simmer and making sure everything is mixed together.
6. Pour the mixture over the eggs and whisk again.
7. Add the pumpkin puree, whisking everything together.
8. Pour into the pastry case and cook at 180degC or Gas Mark 4 for approximately 35 to 40 minutes.
9. Allow to cool and serve with cream.
